Frittata Espanole

Ingredients

  • 9 Whole Eggs
  • 2.5 cups Heavy Cream
  • 1/2 cup Whole Milk
  • 2 tbs. Extra Virgin Olive Oil
  • 3 tbs. Fine Chopped Spanish Onions
  • 2 Cloves of Chopped Garlic
  • 1 tsp. Sea Salt
  • 1.5 tsp Black Pepper Table Ground
  • 2.5 tbs. Chopped Mixed Olives
  • 1 cup Fine Sliced Jamon Serrano (cooked Ham optional)
  • 3 tbs. Fine Sliced Roasted Red Peppers
  • 2 Cup Queso-Melt Shredded Cheese from Block
  • 1 tbs. Green Onions Fine Sliced

Directions

    • Preheat the Oven 350 F
    • In mixing bowl add the Milk, heavy cream and eggs whisk smooth 
    • Set aside
    • Sauté the Onions and Garlic in olive oil until translucent
    • Use a bake proof vessel or Cast Iron Skillet
    • Add the Onion, Garlic, Salt, Pepper, Jamon, Red Peppers, and Olives
    • Top with the Egg mixture and Queso-Melt and garnish with the green Onions
    • Place in the preheated oven
    • Bake until Golden Brown about 35-45 min
    • Remove from the Oven and let rest for 5 min
    • Cut into desired pieces serve with Roasted Potatoes or traditional Grilled Bread (Drizzled with Extra Virgin Olive Oil and rubbed with fresh Garlic), Tomatoes and Fresh Fruit
